But I’m just not a fan of Capri. It VERY crowded and very upscale — lots of boutique/designer shopping which is not my thing at all. A lot of tourist-geared food (not great food).

Please avoid Capri. Capri and Amalfi are being sooo invaded by day trippers, the two Mayors are actually enforcing bans on oversize groups and are considering placing "entry tickets" like Venice has already done.
Please be informed Capri and Amalfi are so crowded with day tripper tourists, the local administrations are studying ways to prevent day trippers from invading.
I loved capri on a weekday in october two years ago. It was not not crowded but it was not annoying.
I went there as a day trip from sorrento. I loved it. ... I got around the island trails, arco naturale trail, via del pizzolungo, via tragara, scoglio del monacone, giardini di augusto, via krupp, marina piccola, then went to anacapri and went up the hill with chair lift, view from monte solaro, hike down via sentiero di valico... they all satisfied me enough to remember that day lovely.
And i definitley recommend a capri day trip if its weekdays.
you can hike around sorrento capri amalfi. all three have hiking trails.
Also, Positano and Capri are must see for me.
perhaps throw in one of the islands (Ischia or, better yet, Procida to avoid the Capri crowd).
