Brussels is certainly more alive, more interesting and offers more contemporary culture than either Ghent or Bruges.
A lot of people roll their eyes everytime I mention Brussels as a great city to visit. Yeah it's not as impressive as Paris or Amsterdam, but it's still worth a good day or two exploring. But what makes Brussels special is how easy it is to explore the surrounding region from.
Belgian here, 3 nights in Ghent is fine if you take a day to visit Brussels or Bruges. I prefer Brussels.
I was only there for maybe 4-5 days for a work trip a few years ago, but I had no issues at all. Walked around alone all over the place, even got drunk at local bars and wandered about. Other Europeans will have better info, but imo compared to places like LA, Vegas or NYC Brussels is infinitely better
It's a fantastic city for eating and drinking. One of the true beer capitals of the world. And, yeah, you can get some great chocolate, waffles, mussels, and fries on the street.
I would do 1 night in Bruges and 3 nights in Brussels, with day trips to Ghent and maybe Antwerp depending on how you're feeling.
People talk about Brussels being boring, but I think 95% of them don't get out of the tourist areas. There are loads of great restaurants and traditional bars all over the city. It's also central to both Ghent and Antwerp (about 40 mins by train from both cities) so you could use it as a base for day trips to both instead of hotel hopping.
