I love my Breville appliances, solid built, but parts and diagrams are pretty hard to find, and it's usually small parts like bearings and rubber goods. For such expensive appliances, that's a hard realization.

That inverted curve means your finer grinds are packing too tight at 7 bar. I hit the exact same thing with my Breville until I added a 5 second pre-infusion. Makes the whole curve flatten out nicely.
