Some towns I stopped in quickly were Kennebunkport, Boothbay, Camden (great view up Mount Battie, you can just drive up to it), Belfast. You can stop in each of these for 1-2 hours to get the gist of them. I stayed overnight in Boothbay (on the way there) and Belfast (on the way back) if you want to do that to break up the drive a bit more.

I can see a feasible route that starts in Dublin, goes north through Belfast (decent hub for anything you want to see in the North), then down through Donegal > Galway > back over to Dublin.
