AC was indeed pretty busy especially in the middle part. However, it was very easy to find a place to eat and stay without running into the crowd. There were just so many teahouses and you can always choose the ones that are outside the main villages or even just on the outskirts. I didn't see any other guests at all at a lot of places I ate or stayed. It's only towards the end where there were fewer choices that I met other guests.

I did the full Annapurna circuit trek at exactly the same time two years ago. There were roads, yes, but I thought it was still great. It wasn't just up and up then down and down the same route. It was my second trek in Nepal and my first independent one after my first, Helumbu, Gosaikunda and Langtang which I did with a guide. There were a lot more guesthouses on the AC so I could stop whenever I wanted and never had to push myself to get to the place to eat or rest. I liked that there were real villages with communities, schools and temples not just guesthouses.
