From early april to early may I have been to Rhodes, Mallorca, Malaga/Cordoba. Andalucia is my top pick, because of the beautiful architecture and lively feel. I bet Seville is magical that time of year.
Might have to get a little strategic in places like andalucia where it hit 45 degrees this past august. Meaning, just stay indoors from like 12-15h and only travel early in the morning or from late afternoon on.

I'd go as far south as possible. You'll get sunny weather and nature in bloom - places like Cyprus, Sicily, or further away, Andalusia. Your toddler can enjoy the beach and playing in the sand, while you relax and soak up the first sun of the year.
I think it’s too many places for this timeframe. You’ll be missing out on a lot of places because of the limited time you’ll have. For example: 3 days in Sevilla would be okay if it was 3 full days in Sevilla, but I assume at least one of those is a partial day because you’ll be arriving/leaving. Also, you’ll miss everything else in Andalucia even though you’re already there! Like Cordoba, Granada, Ronda, etc. 3 days in Algarve is also not enough. Algarve is a big region, stretching from the far west point to the Spanish border in the east. What exactly do you want to see there and have you looked up the times to get/from those places?
