The Insta360 Go Ultra would certainly help you get some amazing video footage. You could use the point of view with a hat clip or a headband or a chest mount. It's a great little camera.

I bought the Insta360 Go Ultra. ... The ultra is just such an amazing little camera. Both audio and video are excellent and it’s so easy inconvenient to use. The removable camera is in my pocket all day long and I have a successful YouTube channel run entirely from that little camera.

I was looking at the same thing for MTB and ended up considering the SJCAM SJ30. Obviously you don’t get the whole “reframe everything later” thing like a 360 cam, but if you just want decent trail footage without spending ages editing every ride, it seems like a pretty practical option.
