I don’t have any experience using it for water sports, but the GO Ultra itself is IPX8 waterproof to 10 metres without a case, and the optional Dive Case is rated to 60 metres, so it is certainly designed with water use in mind.
The Insta360 Go Ultra would certainly help you get some amazing video footage. You could use the point of view with a hat clip or a headband or a chest mount. It's a great little camera.
