Upload a floorplan to design.ui.com, and you can try some AP placements to get an idea of how many you need to cover the house.

It really is a good way to get an estimate of how the various Unifi products are likely to perform in your home.

SInce you have the floorplans, upload them to https://design.ui.com/ and you can try different APs to see what kind of coverage you should expect. I watched one youtube tutorial to get started and it was pretty easy.

Then you can also use design.ui.com to upload a floorplan and see the expected signal depending on where you place access point(s).

Did you model the xgs in unigi design? It might help your decision on the 2nd AP. Model may not be perfect, but it'll let you play around with placement location for a better idea. Recommend playing with it before committing.
