Pros
- I’m a big fan of Wusthof and Shun.
- I use Shun almost exclusively after trying many other brands. I love them, they are just right for me. Holds an edge well, thin blades and solid.
- If it were me I would be only looking at Shun, but I think of them as inherently higher quality than victorinox or wusthof, and I despise western chef knives.
- I’ve seen pictures like this with Shun too but usually it’s not clear that it wasn’t abuse, and I have longstanding personal experience with Shun being durable.
- I don't have experience with Miyabi, but I do quite like Shun. I have several Shun knives and most have got a lot of use. Shun knives have a good warranty and lifetime free sharpening at the Shun Kai/Kershaw factory in Oregon.
Cons
- Are they bad knives? - no Are they great knives? - not really Are they okay/good knives? - yes Are they priced well? - no
- For real. Shun is kinda trash.
- No, shuns are NOT the gold standard for entry level knives. They are merely overpriced entry level factory knives. I collect Japanese knives and I would NEVER recommend anyone spending their money on a shun under any circumstance.
- A nice gyuto, or kiritsuke, a petty knife, and a paring knife. Knives that would heavily outperform Wusthof, Shun, etc.
- Shun, Zwilling or Miyabi Kaizen? Any appreciation on suggestions and brief explanation.

Shun are great starter knife’s but I’ve found the metal to be brittle. They tend to chip easier.
