eSIM if available is fantastic. I didn’t have an eSIM capable phone when traveling for Africa, but just recently went to Taiwan and Malaysia with a layover in Tokyo. You can purchase and install whatever eSIM you’re going to use whenever you want, then activate it when you arrive in that country.
