If you specifically want online brands Engineered sleep and DLX both have a good reputation on the forums since they make mattresses that are constructed simple, they use good quality materials, and they are transparent about those materials.
Comparing them to 3Z brands, I think 3Z does a good job having good variety and giving a decent mattress for the price, but DLX and ES are both a nicer product.

Nest Bedding and DLX will also make you split sides in the same cover. Both of them will left you switch the top comfort layer if you need to adjust.
This doesn’t sound like the typical experience that you get from DLX.
If you don’t love the idea of two separate beds and the inevitable gap in the middle, you might also check out a split firmness option like DLX. The premier hybrid is a great option in a split firmness soft/medium.
