Chimay Blue

The Blue (the "Gran Réserve") is still one of my all-time favorites. Affordable, accessible, comforting.

Like blue and gold. Had them all two years ago on a tour of Chimay. They took us thru the cellar and let up grab up some dusty bottles for a tasting. Glorious!

I love Chimay Red, White and Blue. ... I still think my favorite is the Blue, however.

750 ml bottle of Chimay blue paired with a sandwich bag of cubed 2 yr old Gouda.

It actually beat Chimay Blue (which I loved at the time).

Love myself a good Chimay Blue also!

Between those two, Chimay Blue because it has darker malts in the grain bill and will complement the cooked Maillard notes in the beef.

But both beers you mentioned are delicious and are good "food beers"

Chimay Blue will amplify the mallard richness of the pot roast and being some dried fruit character that will meld nicely

Chimay Blue. A good quad will go wonderfully with that.
